What Is a Brookie Cookie

A brookie is what happens when a brownie and a cookie stop arguing over dessert supremacy and simply move in together. We tried the Classic and Peanut Butter versions from Little Red Kitchen Bake Shop, which answered the important question of whether one dessert really needs another dessert hiding inside it. Apparently, yes.

What is a brookie?

The basic idea is simple: combine the chewy, fudgy character of a brownie with the structure and flavor of a cookie. There is no single mandatory brookie shape. Some look like bars, some resemble cookies, and some are essentially brownie-cookie hybrids.

Little Red Kitchen Bake Shop takes the stuffed-cookie approach. Its Classic Brookie looks like a chocolate chip cookie from the outside, but breaking it open reveals a dark chocolate brownie center.

What does the Classic Brookie taste like?

The Classic Brookie was rich and decidedly chocolate-forward. The cookie exterior gives you the familiar chocolate-chip-cookie experience first, while the brownie center makes the middle denser and fudgier.

It is the sort of dessert built for someone who considers choosing between a cookie and brownie an unreasonable burden to place on a person.

What about the Peanut Butter Brookie?

The Peanut Butter Brookie swaps the chocolate chip cookie exterior for peanut butter while keeping the dark chocolate brownie center. We found the peanut butter flavor bold without completely overpowering the chocolate, which gives this version more contrast than the Classic.

Between the two, preference mostly comes down to whether you want maximum chocolate or the familiar peanut-butter-and-chocolate combination. Trying both is, naturally, the most scientifically rigorous solution.

Are brookies worth trying?

If you like soft cookies and fudgy brownies, the appeal is fairly obvious. A brookie is richer than a basic cookie and more structurally interesting than a plain brownie, especially when the brownie is hidden inside rather than layered underneath.
